As the breakfast category continues to evolve, The Big Biscuit is doubling down on what has driven its growth for more than two decades: operational simplicity, strong community ties and a disciplined approach to expansion. With new leadership, expanded menu innovation and continued development across high-opportunity markets, 2026 is shaping up to be a defining year for the 30-unit breakfast-and-lunch franchise.
Rather than chasing rapid franchise growth in 2026, The Big Biscuit is prioritizing intentional expansion, reinforcing the consistency and experience that have defined the all-American concept since day one.
Leadership Built on Continuity and Growth
At the start of the year, The Big Biscuit announced that Chad Offerdahl (above, left) has assumed the role of president and CEO, reflecting more than 15 years of hands-on leadership within the brand. Having helped guide the company alongside his father, David Offerdahl (right), Chad has played a key role in shaping the systems, culture and operational discipline that support the brand today.
This leadership evolution comes as the brand builds on the momentum of its 25th anniversary and milestone 30th restaurant opening, entering a new phase of expansion across the Midwest and into emerging markets. Offerdahl will guide brand strategy, development and operational execution, while David continues to support the company as owner and partner.
“For me, this role isn’t about changing the brand, but scaling what’s already working,” said Chad. “We’ve spent the last 15 years building a model rooted in consistency, strong operations and genuine hospitality. As we grow, I look forward to continuing to strengthen our systems, support our operators and build an emerging brand positioned for long-term scalability.”
With leadership continuity and a deep operational foundation, the brand is well-positioned to scale without compromising its core identity.
Balancing Menu Innovation, Craveability and Demand
Alongside its leadership evolution, The Big Biscuit is continuing to innovate where it matters most: the guest experience. The brand’s spring menu reflects a growing demand for customization and bold, approachable flavors, while staying rooted in its biscuit-centric identity.
Leading the update is the Build-Your-Own (BYO) Breakfast Sandwich, a customizable option that gives guests greater control over their orders. After gaining traction as an off-menu test, the item has been added as a permanent offering, reinforcing the brand’s ability to listen to guests and adapt quickly.
The Big Biscuit menu also expands shareable options, introducing the Biscuit Basket with four freshly baked buttermilk biscuits and bringing back the Biscuit Trio as a permanent item. With fan favorites like the Bonut (a biscuit dipped in French toast batter, fried and tossed in powdered sugar) and Loaded Sticky Biscuit (buttermilk biscuit dough baked in house made cinnamon filling, drizzled with creamy vanilla icing and loaded with cranberries and pecans), these additions are designed to drive group occasions and increase add-on orders.
Rounding out the lunch lineup, the Nashville Hot Chicken Sandwich brings a spicy, craveable flavor profile that expands the brand’s appeal beyond breakfast while maintaining its made-to-order quality.
Franchise Growth in 2026
The Big Biscuit’s continued growth strategy remains focused on expanding in markets that support its daytime model and community-driven approach. This requires a disciplined, targeted approach, identifying markets that align with its operational model and guest base.
In the near term, the brand is strengthening its corporate footprint with continued growth in Kansas, where four additional locations are slated to open this year. This expansion reinforces the brand’s ability to scale within existing markets while maintaining operational consistency.
Beyond Kansas, The Big Biscuit is exploring new opportunities in markets like Little Rock, Ark., while also making significant strides in Texas, one of its key long-term growth priorities. With a focus on family-oriented communities, college towns and areas with strong daytime traffic, the brand is identifying regions with substantial room for development.
This approach allows The Big Biscuit to grow with intention, working with operators who value the importance of community, consistency and excellence in execution across multi-unit restaurant brands.
Scaling the Breakfast-and-Lunch Franchise
As The Big Biscuit breakfast-and-lunch franchise expands, the focus remains on scaling a model built on operational discipline, strong unit-level execution and consistent guest experiences. Rather than chasing rapid growth, the brand is committed to finding the right franchisees who align with its mission: creating positive experiences for everyone who interacts with the concept while supporting a simple, daytime-focused model.
At its core, The Big Biscuit continues to prioritize and deliver what has always set it apart: hearty food, welcoming hospitality and an experience that keeps guests craving more.
