The Big Biscuit Ignites Growth, Bringing Hometown Hospitality to New Markets

The Big Biscuit opened its first franchise location in 2020, operating as a local favorite with 15 company-owned locations. Just five years later, the brand has transformed into a fast-growing regional concept with 29 locations across the states of Kansas, Missouri, Oklahoma and Arkansas. It’s known for generous portions, hometown hospitality and classic All-American breakfast and lunch menu options. Recognized as a Franchise Times Top 400 2025 brand, The Big Biscuit is quickly emerging as a standout breakfast and lunch brand in the restaurant franchise space and is on track to become a category leader.

The Big Biscuit is accelerating its expansion with five new restaurants slated to open by spring 2026. Most recently, the brand announced a four-unit, corporate-owned development agreement in Wichita, Kansas, with the first location set to open in late October, a second in early 2026, and the remaining two within the next 18 months.

Beyond Wichita, the brand is entering Columbia, Missouri, through a partnership with the Umstattd family. Brothers Corbin and Miles Umstattd (pictured together above), alongside their father Kevin, bring decades of experience as franchise veterans with more than 25 Sonic Drive-Ins across three states. Kevin opened his first Sonic in the early 1990s, and now the family is diversifying their portfolio with The Big Biscuit, bringing operational expertise and a people-first mindset to the brand.

The Umstattd family found strong alignment between their operational philosophy and the brand’s people-first, community-centric values. The Big Biscuit is building on its momentum by narrowing its growth focus to regional communities, including St. Louis, Missouri, the Dallas-Fort Worth, Texas area and other regional markets.

She has more than 30 years of accounting and financial leadership experience, including two decades focused on the restaurant franchising sector. In her new role, Clark is responsible for leading the brand’s finance strategy, forecasting, and planning as the company expands into new markets.
