New VP of Franchise Development Likes Chicken Salad Franchise’s Authenticity
Chicken Salad Chick, a fast-casual chicken salad restaurant franchise, has chosen Mark Verges to be vice president of franchise development. Verges, who has more than two decades of franchising experience, will foster new and existing franchisee relationships, ensure development schedules are met, and enhance recruitment strategies.
Verges praises the chicken franchise’s purpose-driven culture, growth opportunity and favorable market opportunity. After meeting with Chicken Salad Chick’s executive team in Atlanta, he was quickly drawn to the brand’s authenticity and is excited to lead franchise growth and build relationships with franchisees and corporate teams. “When I step into our restaurants, the genuine smiles and gracious hospitality are readily evident.”
The New Orleans native has always been immersed in the restaurant scene and comes from a Cajun French background. As a self-proclaimed foodie, Verges relishes iconic dishes such as gumbo, crawfish etouffee and grilled oysters. Overseeing restaurant operations, sales and multiple disciplines in the industry has fueled his love of service culture and the creative processes in the hospitality field.

Authenticity in Franchising
Verges’ previous franchise experiences include serving as director of franchise and restaurant location development at Ballard Brands, parent of franchises PJ’s Coffee New Orleans and WOW American Eats. His first experience with the franchise business model came when he was a Planet Beach Contempo Spa franchisee, which led him to move to Tampa to expand as an area developer. The advantages of franchising (brand recognition, a proven system and franchisor support) were evident to Verges right away, and he fully embraces the business model. Additionally, leaving a corporate retail role for franchising offered him a balance between established infrastructure and the independence of ownership.
