Clark Brings 30-Plus Years of Accounting and Financial Experience to the Role

The Big Biscuit breakfast and lunch franchise has named Alex Clark vice president of finance. Clark’s background includes 30-plus years of accounting and financial leadership experience, including two decades in the restaurant franchising sector with Goodcents Deli Fresh Subs and Jefferson’s.

“I’m excited to learn the nuances of the breakfast and lunch daypart since my background has been more focused on lunch, dinner and alcohol,” Clark said. “The benchmarks and metrics are different, and I love the challenge of tackling something new. I’m also looking forward to working closely with this leadership team to create the best guest and franchisee experience in the industry. And I can’t wait to get to know our restaurant owners, helping them succeed and contributing to a rising tide that lifts everyone.”

Clark said The Big Biscuit’s culture and leadership team immediately appealed to her. “I first met Marita Swift, our vice president of strategic growth, at a women in franchising luncheon. Someone asked me a question about EBITDA, and as one does when one’s profession is considered as exciting as watching paint dry, I happily turned it into a mini master class. From that, Marita later invited me to consult the team on what to look for in a VP of finance.”

Clark said President and co-CEO Chad Offerdahl’s leadership and vision for the brand also resonated with her. “I loved the idea of helping build a strong finance foundation that supports growth for both the brand and its franchisees. It felt like the perfect opportunity.”

Offerdahl said Clark’s experience in restaurant finance and commitment to franchisee success will help foster the brand’s growth moving forward. “Alex is a strong addition to our leadership team as we build the systems and support needed for the next stage of growth,” Offerdahl said.

Staying Competitive

Clark said keys to The Big Biscuit’s future growth include staying on top of food trends and focusing on the customer experience. “At the franchisor level, it means keeping franchisees top of mind, supporting openings, training and ongoing success. The Big Biscuit exemplifies these approaches to competitiveness and success, and I’m confident that our trajectory to new and uncharted heights is steep and inevitable.”

Outside of her day job, Clark is a retired bodybuilder who loves working out, running and spending time with her kids and grandson.
