From Virtual Kitchens to Eco-Friendly Practices, Food Franchises Are Changing to Meet Consumer Demands

The booming restaurant industry, which generated $997 billion in 2023, has experienced significant changes over the past few years. For example, as the world bounces back following the Covid-19 pandemic, fast-food franchises have increasingly focused on technology to meet the demand for online and on-the-go orders. According to Statista, 2.1 billion consumers will utilize meal delivery in 2024, and that number is expected to grow to nearly 2.5 billion by 2027. Cashless transactions are also expected to increase by more than 80% from 2020-2025, a figure that is anticipated to nearly triple by 2030, according to the Digital Restaurant Association.

A major key to the success of any business, especially in the restaurant industry, is keeping up with trends. With that in mind, here are seven fast-food trends that will shape the industry in 2024.

1. Health-Conscious and Specialty Food Franchises

Food franchisors are seeing a growing trend towards health-conscious and specialty food options. Increased awareness about diet and health has led to a rise in franchises offering organic, vegan, gluten-free, and locally-sourced ingredients. According to the National Restaurant Association’s 2022 State of the Restaurant Industry report, the desire for local sourcing is impacting the dining scene. This change has led to an expansion in specialty food franchises and a transformation in traditional fast-food menus.

2. Technology Integration

The integration of technology, such as online ordering, app-based loyalty programs, and touch-screen kiosks, has revolutionized the food service sector. Technology adoption is a key factor for franchises aiming to stay competitive and appeal to a technology-driven consumer base. According to the National Restaurant Association, four out of 10 restaurant operators plan to add technology or equipment this year to ramp up productivity.

3. Virtual Kitchens and Delivery Services

Virtual kitchens, which cater exclusively to online orders, are redefining the industry. These kitchens, unlike ghost kitchens, focus on reducing overhead costs and are an attractive option for new entrants in the foodservice franchising. Virtual kitchens are known for offering lower initial investments and greater adaptability.

4. Global Flavors and Fusion Cuisines

Fast-food restaurants are witnessing a surge in international flavors and fusion cuisines. Franchises offering unique and authentic dining experiences are tapping into a niche market, attracting food enthusiasts and culturally curious customers. We’re seeing everything from Mexican and Greek to Asian, Mediterranean and more.

5. Sustainability and Eco-Friendly Practices

Sustainability is becoming a pivotal aspect of business operations. Eco-friendly practices, such as sustainable sourcing and biodegradable packaging, are increasingly important to consumers. Restaurants that embrace sustainability are resonating more with eco-conscious customers. In a McKinsey U.S. consumer sentiment survey, more than 60 percent of respondents said they’d pay more for a product with sustainable packaging. Brands like Taco Bell and Burger King have been testing products to appeal to this growing customer base.

6. Customization and Personalization

The demand for customized meals is a significant trend. Consumers value the ability to personalize their meals based on dietary needs. For example, more and more people are looking for dairy-free and gluten-free options. Grand View Research reports that the global gluten-free products market size was estimated at $6.45 billion in 2022 and is expected to grow at a compound annual growth rate (CAGR) of 9.8% from 2023 to 2030. The rising prevalence of celiac and other diseases owing to unhealthy lifestyles is expected to drive product demand.

7. Emerging Formats and Experiences

The sector is diversifying with alternative dining experiences like food trucks, pop-up restaurants, fine dining, and themed cafes. These formats offer unique dining experiences, blending food with entertainment and novelty.

The food franchise business is currently at a critical juncture, shaped by trends such as health-focused menus, advancements in technology, virtual kitchens, international flavors, sustainability, customization, and varied dining experiences. While these trends present challenges, they also provide opportunities for growth and innovation. Entrepreneurs and franchisees who embrace and adapt to these changes early on will find themselves in a favorable position compared to others in the industry.
