Another Broken Egg Cafe, a leading breakfast, brunch and lunch concept, elevated Tom Robertson to Chief Operating Officer (COO). As COO, Robertson will oversee daily operations and implement growth strategies. He has been with the franchisor for five years and previously served as a regional franchise consultant. Another Broken Egg Cafe also promoted Brandy Blackwell to vice president of marketing. 

With this new position, Robertson is “ecstatic to continue my plans of constantly improving our operational performance and delivering an inspired guest experience. [With] that said, it’s important to note that not every brand can grow in a sustainable way.”

Robertson and the Restaurant Franchise Industry

Robertson’s corporate restaurant career began at Steak and Ale in Atlanta. A veteran of the food franchising industry, he has spent the bulk of his time with Applebee’s, working his way up the ladder from kitchen manager to vice president of operations. Robertson also worked as a franchise business consultant for Huddle House, where he got his start in the breakfast and brunch segment.

Robertson enjoys sharing great stories and messages through franchising. He feels fortunate to have found a community of professionals who are focused on sharing best practices and successful systems. “The whole process allows room for both external and internal input, which is crucial to evolving ideas and pushing the brand forward.”

As he opened new locations with Huddle House, Robertson became passionate about the breakfast, brunch and lunch segment. “Once I took on my first role with Another Broken Egg Cafe, I saw the opportunity to identify and address improvements to strengthen the brand’s operations across the board.”
